The raw material is cooked, with a minimum diameter of 30 mm and a maximum of 80/85, with the stem pointing downwards.
The UNIVERSAL SUPER prepares artichoke hearts from very small to very large products, with diameters from 75 mm to 110 mm.
Fresh artichokes must be graded beforehand.
The artichokes are placed by hand in the holes of the holders with their stems pointing downwards.
A circular saw cuts the stem approximately 15 mm from the start of the heart. Another saw then cuts off the remaining stem and a special device shapes the artichoke heart, while another saw cuts the top of the leaves at an adjustable height.
The UNIVERSAL SUPER has simple, robust gears and requires only normal lubrication and careful cleaning at the end of work.
All parts that come into contact with the product are made of stainless steel.
